Procedure:

- Start by boiling plenty of salted water.
- Now work the zabaglione in a bain-marie: over a saucepan with hot water place a steel bowl and start beating the egg yolks and butter with a whisk, mixing everything together, add the wine in a trickle and continue beating over the hot water until you have reached the desired consistency, add the crushed pepper.
- Now cook the ravioli, and toss with a trickle of the cooking water and a tablespoon of eggnog, plate the ravioli and top with the remaining eggnog, a tiny bit of maldon salt before serving and enjoy.
