Video recipes ingredients:

  • 250 g di ravioli al salmone
  • 2 egg yolks

  • 40 ml white wine
  • 4 pink pepper berries
  • Maldon salt
  • Salt
  • Pepper
  • Evo oil

Procedure:

    1. Start by boiling plenty of salted water.
    2. Now work the zabaglione in a bain-marie: over a saucepan with hot water place a steel bowl and start beating the egg yolks and butter with a whisk, mixing everything together, add the wine in a trickle and continue beating over the hot water until you have reached the desired consistency, add the crushed pepper.
    3. Now cook the ravioli, and toss with a trickle of the cooking water and a tablespoon of eggnog, plate the ravioli and top with the remaining eggnog, a tiny bit of maldon salt before serving and enjoy.
