- 350 g cauliflower tagliatelle

Procedure:

- Bake the foil-wrapped monkfish in the oven with oil and a little salt and a bunch of herbs (about 20 min at 190° C).
- Stew leek in pan cut into rounds with a little salt and oil along with shrimp: remove shrimp as soon as they turn pink.
- Blend leek with cream, Parmesan cheese, a pinch of nutmeg, monkfish flesh and butter with mixer.
- Boil the pasta and toss with the prepared sauce, a grinding of pepper and complete the dish with the shrimp tails kept aside.
