INGREDIENTS FOR TWO PEOPLE

  • 250 g radicchio ravioli “Più voglia” De Angelis
  • 1 head of red radicchio
  • 60 g taleggio cheese
  • 40 ml milk
  • almonds to taste
  • parsley to taste
  • salt to taste
  • pepper to taste
  • extra virgin olive oil to taste

PROCEDURE

Divide the head of radicchio into 4 parts lengthwise and grill on a griddle until soft. Then place it in a bowl and season with a tablespoon of oil, a pinch of salt and pepper; allow to cool.

At this point chop the radicchio to taste. Place the diced taleggio cheese in a small saucepan along with the milk and slowly melt it in a bain-marie. Once the desired consistency is reached, add the chopped radicchio.

Meanwhile, boil water in a saucepan, add salt and, once it reaches a boil, cook the De Angelis ravioli for 4 minutes. Finally, serve with the taleggio and radicchio cream, garnishing with parsley, almonds and chopped radicchio to taste.
